Chop all veggies Eggplant and Green Onion, set aside
In a medium heat skillet add cooking oil, once the oil has ripples it is ready for frying
Add Eggplant to cooking oil and sautee, turn eggplant over once or twice remove and set aside
Now in the same skillet add ground meat use a spatula or fork to press down separate and brown meat, while it's cooking add garlic, sesame oil, oyster sauce, soy sauce and chili pepper flakes stir constantly so all the flavors will combine well.
After the meat is done pour in chicken broth and continue to stir
Add in Eggplant and stir to coat the eggplant with all the flavors of the meat and sauce
in a small bowl mix corn starch & water then pour into the skillet of stir fry at the very end it will thicken but continue to stir until it completely coats the eggplant
